Pruning blockchain mid-download

Hi, I'm in the process of syncing my Monero GUI wallet with the blockchain for the first time. It's been downloading now for several days and it is still not completely downloaded. No problem, I can wait. But I need to use my wallet today and was wondering what would be the best way to do this. I am thinking about pruning, because as I understand it, remote nodes are not the best option. Is it possible to prune a blockchain that's already being downloaded? How does it work, will it start downloading from the beginning again or can it prune from the part that's already been downloaded? Are remote nodes my only option if I want to use my wallet today? PS. What if I use a remote node with VPN, shouldn't that add more privacy?
