Offline wallet

If I create an offline wallet that never ever touches the internet or the blockchain, then I have someone send funds to that address, then the funds will still be received by my wallet, do I have that correct? I just want to make sure so as to avoid losing money. Also, is connecting my wallet to a node the only way to view outgoing transactions?
